Ingredients

  • 1 cup herring
  • 1/2 Granny Smith apple
  • 1 tablespoon currants
  • 1 tablespoon mayonnaise
  • 1 tablespoon chopped walnuts

Instructions

Preparation

  • Chop herring with a knife. Remove any bones.
  • Peel and chop apple. 
  • Mix all ingredients in a bowl.

    I would make this dish with pickled herring, omit the mayonnaise, but leave the rest of the ingredients alone.

    This would be good with the addition of cooked, cubed Yukon Gold potatoes–of course, a bit more dressing too. Probably have to change the name, though! 😉
