I love snacking on falafel balls but they are usually such a process to prepare and I never get around to making them. With this easy homemade dried falafel mix, all you have to do is mix together a few ingredients and it’s time to nosh! This mix is also great on chicken and fish.

Homemade Dried Falafel Mix

Ingredients
- 5 cup garbanzo bean flour aka chickpea flour can be found in most health food stores and the health food aisle of your local grocery store
- 2 tablespoon salt
- 2 tablespoon dried parsley flakes
- 1 tablespoon ground cumin
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 2 teaspoon ground coriander
- 2 teaspoon turmeric powder
- 2 teaspoon chili powder
- 2 teaspoon baking powder
Instructions
- Blend all ingredients together.
- Store in an airtight container at room temperature.
- *to make falafel, combine 1 cup homemade dried falafel mix with 1/2 cup hot water and 2 tsp lemon juice. Set aside for 15 minutes to thicken. Pan-fry spoonfuls of the mixture in hot vegetable oil for 2 minutes on each side.











It is a lot of salt but what we feel tastes best. You can of course try it with less and add if needed for your taste.
Thanks for this! One question, is it really supposed to say 2 tablespoons of salt? That's a lot – 1400 mg of sodium per serving (assuming the 1 cup amount is for 2)
There is garlic powder, and you can for sure add onion powder, no reason just personal preference to leave it out
Thanks! I didn’t see that before. I did add onion flakes and made a batch of these but it turned out thin like pancake batter so clearly I did something else wrong! I’ll try again 😂

Make chickpea flour very easily by dumping dried chickpeas in a blender and running it on high for a few minutes until all of it is a fine powder. A pound of dried chickpeas makes about 4 cups of flour. Also, when I don’t have lemon juice on hand I just add a few teaspoons of lemon pepper or food grade citric acid to the above recipe.
Have you tried baking or air frying them?
I know this is old, but I do mine in a waffle iron – crispy with no oil. But you have to experiment with how long to cook it (in mine it's 10 minutes) because if you open it too early the waffle splits apart with top and bottom each sticking separately.
what do you mean by chili powder? The chili powder mix that one uses to make a chili bean stew or something like powdered cayenne peppers. I always find it confusing when this isn’t specified in a recipe and just chili powder is listed as an ingredient.
Yes, any chili powder will work here and in most recipes that don’t specify. It is true most chili powders are blend of chili peppers and other seasoning but usually they are in these recipes to add some heat.

Thank you for this. I had to give up falafel a few years ago because of sodium restrictions. Also, I live alone so it wasn’t easy to make a small batch. Now, with this & your guidelines, I can! Not traditional, but an old neighbot introduced me to an alternative ‘recipe’ to give fresher taste to boxed mix, and it is still a tasty addition to your homemade mix. Before you add the water to the falafel mix, grate 1 medium carrot and 1/2 small onion (about 3 to 4 tablespoons of each) & incorporate into the mix thoroughly. Add the hot water in three or four batches – you usually don’t need the full measure because of the ‘juices’ from the fresh raw veggies. The other thing I learned from this neighbor was to use 3 parts potato to 2 parts carrot for latkes – frying really brings out the natural sweetness of carrots & it gives a lively bit of color to the platter.
This recipe with spices and all is to make your own falafel mix, if you buy he mix then just go ahead and follow package directions.
can i use regular store bought falafel mix, i dont have time to look for the chickpea flour
I have used the breading mixture on chicken and fish and it is delicious. Have not tried the falafel yet as I used to make with raw chickpeas.
This is also a great gluten-free substitute for breading chicken and fish.
Garbanzo Bean Flour – Bob’s Red Mill produces it.
Check the health food aisle of your local grocery store. I’ve seen it in pretty much every grocery store I’ve been to so hopefully you should be able to find it easily.
