And now you can make an Israeli "Ice Cafe", which is essentially a frozen coffee slushy, at home. There are a two tips to achieving that creamy frothy texture. The first secret is to use milk ice cubes. Any milk will do, including non dairy varieties, my favorite is almond milk. Second, make sure your coffee is cool. Placing warm coffee into the blender will effect the thickness and texture. As for the sweetener I love silan (date honey) but again feel free to use your preferred product. A 1/2 cup of liquid sweetener will yield a very sweet frozen coffee (just like the coffee slushy served in Israel) so adjust the amount of sweetener down if desired.

- 2 trays "milk" ice cubes
- 2 tablespoons coffee dissolved in 2 tablespoons water
- Up to ½ cup liquid sweetener of choice (silan, honey, maple syrup, agave, simple syrup)
Place milk ice cubes, coffee and sweetener in a blender.
Process until smooth.
