Israeli Orzo Salad

Don't let the produce in your fridge go to waste- chop up some veggies and combine with Israeli orzo to make a lemony salad, served cold.

  • 1 box orzo
  • 2 Roma tomatoes, chopped
  • 4 cucumbers, chopped
  • 1 red onion
  • ¼ cup chopped parsley
  • 1 lemon, juiced
  • ¼ cup extra virgin olive oil
  • Salt to taste


1. Boil the orzo in salted water according to box instructions, you don't want it to be mushy. 

2. Meanwhile, combine olive oil with lemon juice, and toss well with chopped vegetables. 

3. Once the orzo is cooked strain and rinse well and mix it in with the vegetables. Refrigerate for 1 hour to overnight for tastiest results to let the flavors meld.
