This kale and potato hash would be perfect topped with an egg and served any time of day. Or you can add ground sausage and make it even more filling for a meat lover.

- 3 tablespoon olive oil
- 4 cups diced potatoes (any variety from sweet to blue to Idaho)
- 2 cloves garlic, minced
- 1 bunch kale, remove stalks, slice leaves thin
- salt and pepper to taste
Heat oil in large saute pan over medium high heat. Add potaotes and leave to cook stirring infrequently about 15 minutes until golden brown and crispy on the outside and soft on the inside.
Add garlic and kale, stir and cook until 5 minutes until wilted. Sprinkle with salt and pepper to taste.
