Latkes with a truffle twist

These classic latkes are enhanced with truffle salt, a fragrant and earthy seasoning.

  • 2 potatoes
  • ½ yellow onion
  • ½ cup flour
  • ½ teaspoon salt
  • 1 egg
  • Extra-virgin olive oil
  • ½ teaspoon salt
  • Sharp cheddar cheese
  • Salsa


1. Combine potatoes, onion, and flour in a food processor. Mix, blending into mush. Add salt and egg, and mix thoroughly.

2. Form into patties. Set aside.

3. Fill a medium frying pan with ½ inch of evoo, and heat on stove until a drop of water flicked into the pan sizzles. Arrange patties in pan and fry till golden brown. Use a spatula to remove from heat.

4. Sprinkle with truffle salt before serving. Serve with sharp cheddar cheese and salsa.
