Lebanese Chicken Kabobs

Ingredients
Bamboo skewers
Chicken Marinade
- juice of 2 limes
- 8 cloves of garlic, minced
- a few leaves fresh thyme
- 1 Tbsp paprika
- 1 1/2 tsp cumin
- 3/4 tsp cayenne
- 3/4 tsp cinnamon
- 1 tsp sriracha hot sauce
- 6 boneless skinless chicken breasts
Veggies
- 2 peppers
- 2 zucchini, sliced about 1/2 inch thick
- 1 package mushrooms
- 1 onion, cut so that the layers stay together
- olive oil
- sea salt + pepper
- fine herbs
Preparation
Step 1: Soak bamboo skewers in water
Step 2: Cut chicken into 1 inch squares
Step 3: Mix marinade ingredients together and pour on chicken. Marinate for at least an hour - best is overnight.
Step 4: Chop up the veggies. Coat with olive oil, sea salt, pepper and fine herbs.
Step 5: Put veggies and chicken onto skewers - not too close together to make sure they cook well
Step 6: Grill on BBQ, turning regularly.
