- 1 onion, chopped (about ½ cup)
- 2 tablespoon vegetable oil
- Pulp from 9 zucchini or yellow squash
- 1 teaspoon sugar
- 1 teaspoon kosher salt
- In a medium saucepan, saute the onion in the oil over medium heat for about 2 minutes, or until translucent.
- Add the squash pulp, sugar, and salt to the saucepan. Saute on medium-low heat for 4 more minutes or until squash is soft.
- Serve with mehshi kusa or fresh pita.
