  • 1 onion, chopped (about ½ cup)
  • 2 tablespoon vegetable oil
  • Pulp from 9 zucchini or yellow squash
  • 1 teaspoon sugar
  • 1 teaspoon kosher salt


  1. In a medium saucepan, saute the onion in the oil over medium heat for about 2 minutes, or until translucent.
  2. Add the squash pulp, sugar, and salt to the saucepan. Saute on medium-low heat for 4 more minutes or until squash is soft.
  3. Serve with mehshi kusa or fresh pita.
