Mango Veggie Roll Ups

  • 1/3 cup whipped cream cheese
  • 2 burrito size flour tortillas
  • 1 medium ripe mango, peeled, pitted and cut into 1/2-inch thick strips
  • 2 green onions (green tops only)
  • 1/2 small carrot
  • 1/4 cup each: thin julienne strips jicama and red bell pepper


Spread cream cheese over tortillas and place mango, green onion, carrot, jicima, and bell pepper over 2/3 surface. Roll up tightly. Gently squeeze rolls to secure ingredients then cut into 1/2-thick slices.
