No-Cook Keylime Pie

This recipe is parve, vegan, gluten free, raw, and can be used for passover. It’s also very healthy and delicious!

Let coconut oil stand in a warm place or use a double boiler to melt.

Ingredients

  • 1 1/2 cups macadamia nuts or cashews
  • 1/2 cup shredded coconut
  • 2 cups pitted dates
  • pinch salt
  • 4 huge Hass avocados
  • juice of 11 big limes
  • 3/4 cup agave nectar or honey
  • 1/2 cup virgin coconut oil melted

Preparation

  • 1 To make a crust, put first 4 ingredients in the food processor.2 Process the mixture until it is well combined, a little bit chunky, and sticky.3 When it is done, press the crust mixture evenly into a 9 inch pie pan.5 For the filling blend or use the food processor, combine the avocadoes, limes, agave nectar, and coconut oil.6 Blend until smooth (this may take up to 5 minutes in a food processor) and pour the filling over the crust.7 Smooth the top.8 Press plastic wrap directly onto the surface of the pie and place it in the refrigerator for at least one hour and up to one day before serving.
