North African Braised Chicken

Flavorful braised chicken recipe with raisins makes a great make ahead recipe. It reheats well and is is great anytime of year.

  • 1 tbsp. olive oi
  • 4 boneless, skinless chicken breast halves
  • 1/2 tsp. salt
  • 2 medium onions, thinly sliced and separated into rings
  • 1 c. California raisins
  • 1/2 tsp. curry powder
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground cardamom
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cayenne pepper
  • 1 c. reduced sodium chicken broth
  • 1/2 c. white wine
  • Hot cooked couscous


1 Heat oil in large skillet or pot with tight fitting lid.
2 Season chicken with salt and add to skillet; cook over medium-high heat for about 5 minutes on each side or until golden brown. Remove from skillet and set aside.
3 Add onions to skillet; cook, stirring frequently, for 5 to 10 minutes to soften.
4 Stir in raisins and seasonings. Return chicken to skillet and arrange onions on top.
5 Add broth and wine; cover and simmer over low heat for 1 hour.
6 Uncover and simmer for 15 minutes more to reduce sauce. Serve chicken and sauce over couscous.
