Ingredients

  • 2 cup old-fashioned oats
  • 1 cup all-purposed flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup packed brown sugar
  • 1 cup raisins
  • 1 cup walnuts chopped
  • 1/2 cup canola oil
  • 3 egg whites
  • 1 teaspoon vanilla extract

Instructions

  •  Mix:
  • Layer the oats, flour, salt, cinnamon, brown sugar, raisins and walnuts in a 1-quart glass jar.
  • Cookies:
  • Preheat oven to 375.
  • Mix together oil, egg whites, and vanilla in a large bowl. Add the cookie mix and stir until combined.
  • Drop dough by the rounded tablespoons 2 inches apart on greased cookie sheets. Dampen fingers with cold water and flatten dough into 2-inch rounds.
  • Bake 10 to 12 minutes or until cookies are golden, but not brown.
