As an appetizer, side dish or even as a dessert, there's nothing so refreshing as a fresh carrot salad. We've added oranges and sliced almonds for a nice tang and a little crunch.
- Prep Time
- 5 medium carrots, peeled and shredded
- 2 small oranges, peeled and chopped
- 2 tablespoons orange juice
- 1/4 cup sliced almonds
- 2 tablespoons mayonnaise
In a large bowl, combine the carrots and oranges. Drizzle the orange juice over carrots. Dress with mayonnaise. Top with sliced almonds.
