Papanash Cheese Patties with Cranberries

Papanash are usually sweet cheese doughnuts, patties or cooked dumplings.

The most common Papanash are the deep fried Doughnuts. I make them every now and then
But personally, I like this version with cranberries better as well as another one with a crunchy crumble.

  • 2 cups Farmer cheese or Ricotta cheese
  • 5 Tbs sugar
  • 1 tsp vanilla extract
  • A pinch of salt
  • A bit of lemon and orange zest
  • 6-7 Tbs sifted flour
  • 2 eggs
  • 1/2 cup dried cranberries or raisins or dried blueberries
  • Canola oil or Butter for frying


Mix all the ingredients and let the mixture set in the refrigerator for at least one hour before frying.

Heat the olive oil in a frying pan.

Make little cheese balls (wash your hands from time to time because they'll get sticky).

When the oil is warm enough, fry the patties on medium heat for about 2-3 minutes on each side.
