This is a combination of my two favorite things pizza and baked goods! It’s an easy recipe that everyone from picky eaters to those who love gourmet additions will love! They are completely adaptable to your liking. You can add the cheese and vegetables of your preference and any extras you see fit (I personally love to place an olive in the center of each muffin and press them into the batter!). They are a ton of fun to prepare as a family or with a bunch of friends! You can divide the batter into different bowls and everyone can add their own toppings. Use different colored cupcake liners to differentiate between everyone’s custom pizza muffins! Enjoy!

Ingredients

  • 1/2 cup sliced mushrooms
  • 1 1/4 cup grated mozzarella cheese
  • 1/4 cup shredded pizza blend cheese
  • 1/2 cup pizza sauce
  • 2 teaspoon garlic powder
  • 5 large eggs
  • 1/4 cup oil
  • 1 1/4 cup flour
  • 1 tablespoon baking powder

Instructions

  • Preheat oven to 350 degrees F In a large bowl combine mushrooms, cheese, pizza sauce and garlic powder In a separate bowl beat eggs Blend in oil Add flour and baking powder Beat until smooth Stir cheese mixture into flour mixture until well blended Spoon mixture into greased muffin liners (the muffins will stick to the liners otherwise and prove difficult to remove) Bake for 20-25 minutes until lightly browned Can be served either warm or cold Store in refrigerator
