Potato Breakfast Pancakes - PBP's

I made this for a brunch and it came out a miracle everyone was begging for more. It's very simple.

  • 1 1/2 cup of flour all-purpose flour is better
  • 1 1/4 cup of milk
  • 3 1/2 teaspoon baking powder
  • 1 egg
  • 1 teaspoon salt
  • 1 potato, mashed
  • 3 tablespoon butter, melted
  • 1 tablespoon sugar
  • 1/2 cup farmers cheese, optional
  • Brad's organic maple syrup
  • more butter for cooking


In a large bowl, sift together the flour, mashed potato, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter and farmers cheese if using; mix until smooth.
Heat a lightly buttered griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot with maple syrup.
