Raw Gingerbread Bites
Gingerbread cookies are a guilty winter comfort food pleasure, but Raw Gingerbread Bites are a guilt-free and healthy fix for that cookie craving. After blending the ingredients together, let the kids help to roll them out and shape them.
Note: You can soak the nuts in advance for at least 6 hours to promote healthier digestion, but it's not necessary.

Ingredients
- 1 cup dates (softened in water for 15 minutes and then pitted)
- 1/2 cup almonds
- 1/2 cup pecans
- 1/4 teaspoon ginger
- 1/4 teaspoon cloves
- 3/4 teaspoon cinnamon
Preparation
Combine all the ingredients into a food processor and blend until the mixture becomes a thick constistency like cookie dough. Roll out onto a clean tabletop or wax paper, and cut out shapes with cookie cutters, or roll into bite sized balls.
Can be stored in an airtight container in the refrigerator for about a week. (I recommend layering the shapes between pieces of baking paper so they don't stick together).
