Rice with Corn

rice and corn

this is a friday night standard at my house, the kids love it.

  • 2 cup persian rice any med grain white rice will do
  • 1 can corn kernels or 1.5 c frozen corn kernels
  • 2 tablespoon canola oil
  • 3.5 cup boiling water


in a small lidded pot, heat oil, and also boil water. add rice to the pot with oil, stir and let cook a few min while stirring so all of the rice gets a distinct white color. add salt to taste (i put 1 tsp) and drained corn. stir and add 3.5 c boiling water, cover and let simmer on low for 20 min. enjoy!
