We love crunchy chicken that you can just pop in your mouth, but we don’t love the frying, it’s smelly, and messy and has lots of extra fat and calories. Instead we used cornflake crumbs to coat small pieces of chicken which you can then bake or air fry for a crispy result that remind me of popcorn chicken.

Spicy Popcorn Chicken

Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 2 tablespoons honey
- 2 teaspoons Dijon mustard
- 2 cups cornflakes
- Kosher salt
- Freshly cracked black peppers
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- cooking spray
Instructions
- Preheat an oven to 400F and line a baking sheet with a wire rack if possible. Or if you’re using an air fryer, spray the basket with nonstick cooking spray.
- Coat chicken with honey and mustard so it can marinate for a few minutes while preparing the other ingredients. In a large zip-top bag, add cornflakes, salt, pepper, garlic powder and paprika. Seal shut. Using a rolling pin or bottle, crush cornflakes inside bag leaving them somewhat coarse. Transfer crushed cornflakes to a shallow dish.
- Coat marinaded chicken in crumbs, place on prepared sheet pan, spray with cooking spray and bake for 20 minutes until chicken is cooked through. Serve with squeeze of lemon wedge overtop, if desired.
