Strawberry Bread

Great bread to use those strawberries, even the ones at the end of their life. I have also made this recipe parve using margarine and soy yogurt.

  • 1/2 cup Butter or margarine
  • 3/4 cup Sugar
  • 3 Eggs
  • 1 teaspoon Vanilla
  • 2 cup Flour
  • 1/2 teaspoon Each of baking soda & baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Plain or vanilla yogurt
  • 1 1/2 cup Sliced strawberries


Spray a loaf pan and pre heat the oven to 350.

Cream the butter and sugar with an electric mixer. Add the eggs one at a time mixing after each addition. Add the vanilla and mix another minute.

Whisk the dry ingredients together. Mix in the dry ingredients, alternating with the yogurt. Start and end with the flour. Do not over mix. Gently stir in the strawberries. Pour into the loaf pan and bake. Cool for about 10 minutes in the pan, then turn onto a wire rack to finish cooling.

The cooled bread can be glazed with 1cup of powdered sugar whisked with 1 T fresh lemon juice.
