Sweet and Spicy Chai Latte

DIY homemade chai latte, my comfort food

I developed this Chai Concentrate/Chai Latte with the aid of no less than 5 online recipes as a guide. It is the perfect blend of spicy and sweet. Make the concentrate each week and then enjoy your latte whenever you need a little bit of warming comfort.

For Concentrate

  • 4 cups water
  • 8 black tea bags
  • 1/2 cup honey
  • 1 teaspoon pure vanilla extract
  • 2 cinnamon sticks or 2 teaspoons ground cinnamon
  • 10 whole cloves
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
  • 2 pinches nutmeg
  • Rind of 1/2 a large orange
  • 6 whole black peppercorns

For Latte:

  • Cinnamon sticks
  • Chai concentrate
  • Milk of your choice (dairy, soy or nut based)
  • Ground cinnamon
  • Honey, optional


To prepare concentrate: Combine water, tea, honey, vanilla, cinnamon, cloves, cardamom, ginger, nutmeg, rind, and peppercorns in a saucepan and bring to a boil over high heat. Boil for 10 minutes, reduce heat and simmer, covered, for 30 minutes. Strain through a fine mesh sieve lined with cheesecloth, pressing and squeezing out all liquid from the tea bags. Store concentrate in an airtight container in the refrigerator for up to 1 week.

To assemble latte. Place cinnamon stick in a tea glass or mug and combine equal parts warm Chai Concentrate with steamed milk. Dust with ground cinnamon and sweeten with additional honey if desired.
