  • 1 pint mushrooms
  • 1 large onion
  • 2 medium carrots
  • 2 medium parsnips
  • 2 piece celery stalks
  • 1/3 bunch dill
  • 1 medium green pepper
  • 1/4 cup lime juice
  • 1/4 cup raw unprocessed sugar
  • 1 can 25% lower sodium tomato soup
  • 1 pound ground dark turkey
  • 1 medium egg
  • 1/4 cup oats
  • 1 box pasta of choice

1. Chop up onion. Peel and cut carrots, parsnips and mushrooms into small pieces. Cut celery stalks into small pieces as well as green pepper. Chop up dill.

2. Pour tomato soup and water into pot and add above ingredients. Add lime juice and sugar. Stir and cook. While waiting for the above to boil, prepare meat.

3. Add egg and oats to ground turkey and make between 20-40 meatballs, depending on size preference. Add meatballs when sauce boils. Stir and reduce heat. Cook for one hour, periodically stirring.

4. Make pasta in separate pot about 15 minutes before meatballs are ready.
