When you don't know what to serve as a side dish try these simple roasted sweet potato wedges.
Make sure to use a great quality extra virgin olive oil. We love Colavita!

1. Preheat oven to 400°F. Line 2 jelly roll pans with foil. Spray with cooking spray.
2. Peel potatoes and halve lengthwise. Cut each half into 4 wedges and place in a large bowl. Toss with oil, salt, and pepper. Place on prepared pans. Bake for 15 minutes. Remove from oven and turn the potatoes. Return to the oven and continue baking for another 15 minutes.
