Tamarind Extract

Tamarind is a pod-like fruit found in Africa, Asia, and the Middle East. Look for tamarind concentrate in stores that sell Indian or Middle Eastern ingredients.

  • 400 g tamarind concentrate 
  • 500 g sugar
    4 cups water


Mix all the ingredients in a medium pot and bring just to a boil over high heat. Remove from the heat and set aside to cool. 

The tamarind extract can be stored in a jar in the refrigerator. It adds a great flavor to marinades and sauces.
