Kind of like soft chewy gingerbread type cookies – anything you can find like that should work.
What are soft molasses cookies? (I live in Israel.)

Most kosher stores sell marshmallows these days or you can make your own – see this recipe – http://joyof.kosher.com/recipe/yaels-chocolate-smanwiches/
Someone please tell me where you found kosher marshmallows! Seriously this is my one “beach day” and camp out treat that I always have to pass on! It bugs!
Do the roasted marshmallows hold if you don’t use them right away? Wondering if you could do them ahead for Shabbos.
