Ultimate Israeli Sandwich

This sandwich highlights butter, edam cheese and fresh crunchy vegetables.

  • 6 tablespoons unsalted butter, room temperature
  • 12 thick slices whole grain bread
  • 6 slices edam cheese (full or low fat)
  • 2 cups spring mix greens
  • 1 Persian cucumber, thinly sliced
  • ½ cup thinly sliced radishes
  • Chopped scallion, optional 


  1. Spread butter on both sides of bread.
  2. Top with cheese, greens, cucumber, radish and scallions if desired
  3. Wrap in parchment or plastic wrap for picnic or lunch.
  4. Serve at room temperature.
