This sandwich highlights butter, edam cheese and fresh crunchy vegetables.

- 6 tablespoons unsalted butter, room temperature
- 12 thick slices whole grain bread
- 6 slices edam cheese (full or low fat)
- 2 cups spring mix greens
- 1 Persian cucumber, thinly sliced
- ½ cup thinly sliced radishes
- Chopped scallion, optional
- Spread butter on both sides of bread.
- Top with cheese, greens, cucumber, radish and scallions if desired
- Wrap in parchment or plastic wrap for picnic or lunch.
- Serve at room temperature.
