Wild Mushroom Matzo Pizza

  • 1 Tbsp. olive oil
  • 1 lb. assorted mushrooms, sliced (any combination of crimini, shitake, portabella, or oyster)
  • 2 Cloves garlic, crushed
  • Salt and pepper to taste
  • cooking spray
  • 4 pieces of matzo
  • 1/2 cup tomato sauce
  • 1/2 cup shredded mozzarella cheese


1 Preheat oven to 400°F.

2 Heat pan over moderate heat, add olive oil, and mushrooms, sauté a few minutes, then add garlic and continue cooking until browned and water has evaporated. Then add salt and pepper, remove from heat.

3 Spread out 4 pieces of matzo on a baking sheet sprayed with cooking spray. Spread tomato sauce evenly over each piece of matzo.

4 Sprinkle with cheese and top with mushrooms. Bake for 5 minutes or until browned.
