ZUCCHINI PIE

Zucchini is a great vegetable. Nothing like a zucchini pie or casserole with spices and cheese.

Ingredients

  • 2 1/4 cups shredded zucchini
  • 1/2 cup diced red pepper
  • 1 small chopped onion
  • 4 eggs beaten
  • 1 tablespoon oregano
  • 1 teaspoon basil
  • 1/2 cup oil
  • 1/2 teaspoon salt
  • 1 cup Bisquick
  • 1/2 cup grated sharp cheese

Instructions

  • Preheat oven to 350. Grease a 9X13 pan.
  • In a bowl, combine all ingredients and mix well to combine.
  • Pour the mixture into the greased pan and bake for 30 minutes or until done.

    Substitute for Bisquick =
    1 cup flour
    1 1⁄2 teaspoons baking powder
    1⁄4 teaspoon salt
    1 tablespoon shortening (Crisco)

    I just made this today (Starting to incorporate more Kosher eating to our interfaith family) and the family LOVES it. I served it with some corn salad for some freshness and crunch and to add some summer to this rainy day. Thank you for the amazing recipe!
