Ingredients

  • 2 tablespoons honey
  • 3 limes juiced
  • 3/4 cup bottled pomegranate juice
  • 1 cup canola oil
  • 2 tablespoons sesame oil
  • kosher salt
  • pepper
  • 4 6-8 oz boneless and skinless chicken breasts
  • 1 12 oz package field greens
  • 1 head radicchio cut to bite size pieces
  • 2 cups about 2 bunches arugula, cut to bite size pieces, stems removed
  • 1 cup sun dried cranberries
  • 1/2 toasted pecans optional
  • 4 clementine oranges separated into sections, cut in half
  • 1 pomegranate quartered and seeds reserved

Instructions

  • In a small bowl, combine the honey, lime and pomegranate juices. Whisk in the canola and sesame oils. Season with salt and pepper. Pour half this liquid into a small container and reserve. Place the remaining liquid in a 1 gallon zip tight bag. Add in the chicken breasts and allow to marinate for 2 – 4 hours, refrigerated.
  • Remove the chicken breasts from the marinade and discard liquid. Grill the chicken breasts over medium high flame. When cooked through, allow to cool a few minutes, and then cut into long strips, about ½” wide.
  • Meanwhile prepare the salad by combining the field greens, radicchio and arugula. Toss in the cranberries, pecans if desired, clementine sections and pomegranate seeds. Add in the reserved dressing and place onto individual plates. Arrange the sliced chicken atop the salad. Serve at room temperature.

    Yes, thank you. I actually eat ridiculously delicious foods, am a big foodie and quite the cook and host, if I do say so myself. However I am quite aware of nutrition as well, though not every one is.Unfortunately many people don’t realize how calorie dense a dish like this is. I do believe that information should be clearly stated so that people would be able to decide if this is something they want to serve to their families.

    There is nothing healthy about ingesting 1/4 cup of oil. Eating too much of a healthy food will not make you any healthier, it will make you obese.I’m sorry, my family’s health is first and foremost. Don’t we always wish the best for them? Calories are of course a good thing, we need them, they are our fuel. But if we are ingesting too many of them, they get stored up as – fat.I believe the key is to serving fabulous tasting food that is also fabulous for us. I could never ever take pleasure in feeding my family so many calories for one piece of chicken. I’m sorry, there are ways to eat delicious, eye appealing, seasonal foods without putting my familys’ health at risk. We pray and wish for a Happy and Healthy new year, yet we serve this dish. Something just isn’t right here.

    Please see recipes for their whole value, not just for their numerical worth. This recipe is delicious to eat, beautiful to look at and is seasonably perfect. It’s also only a quarter of the calories per serving. Additionally, half the dressing is used as a marinade; and after a few hours 95 % of the marinade will be discarded.

    Don’t be misled into thinking of calories as a bad thing. We need a good healthy portion of them to survive. Take pleasure in the opportunity to be creative in the kitchen. Enjoy the flavor and feel of your creations in your mouth and upon your soul. Take pleasure in the experience you and your family will have when serving flavorful and healthful food.

    Wait a second.. aren’t we serving this to our loved ones, not our enemies! The one cup of canola oil has 1908 calories. the two tablespoons of sesame oil has 240 calories, the honey has 128 calories, the cranberries 540.. that’s not even counting the chicken and other ingredients..I just don’t understand this recipe..
