Chocolate Covered Orange Rind

Chocolate Covered Orange Rind

Ingredients

  • 2 large naval oranges washed well
  • 1 cup water
  • 1 cup sugar
  • 1 package dark chocolate chips

Instructions

  • 1 Slice the ends off the oranges then cut off orange peel. Cut the peel into strips. 2 In a medium pot, bring water to a boil and cook for a few minutes. Then rinse and throw in boiling water again. 3 Prepare simple syrup of 1 cup water with 1 cup sugar and bring to a simmer. Add orage peels and cook for 1 hour with pot covered. Remove from the pot and place on rack to drain. 4 Melt chocolate in a bowl in a microwave for one minute, checking and stirring every 20 seconds (do not add water). 5 Dip the candied orange peels in the choclate, remove and lay it on parchment to harden.

    I try not to include too much pith when I cut it but I don’t scrape it away, you need some of it to have something chewy at the end.

    When preparing the orange rind. do you include the “pith” (spongy white stuff under the peel) or should that be scraped away?
