Fennel Caesar Salad

I love to make caesar with my special dressing, but I wanted to change it up a bit this time and so even though my husband disagreed, I tried it with some thin sliced fennel. Now, he says he doesn’t know if he can it without fennel. I love being right.

Ingredients

  • 1 fennel bulb sliced very thin (a mandolin is useful here)
  • 2 heads of romaine – cleaned well and torn into pieces
  • 1 tablespoon capers optional
  • Caesar Dressing
  • 1 cup croutons

Instructions

  • Mix lettuce, fennel and capers in a large salad bowl.  Toss with dressing and top with croutons.  Enjoy.
  • We have a few Caesar dressing recipes on this site, this is my favorite – Non Dairy Caesar Dressing.
