Dinner Tonight – A Week of Menus with Balsamic Portobello “Burger”

This week it we are thinking summer and ease.  Fill out your shopping list and get to the store for an easy week of meals.

For our meatless Monday meal let’s try this Balsamic Portobello “Burger” that really makes it feel like Summer is coming.  Serve with Sweet Potato Fries.

Tuesday let’s go for some Chicken and Peanuts with Noodles, a one pot wonder.

Wednesday is fish night with a Roasted Pistachio Crusted Salmon and a gorgeous and spring filled Couscsous Salad with Asparagus and Tomatoes.

Thursday is a great night for a Brilliant Chili topped with Walnuts, it is made with ground turkey, but fake ground meat would be great too.
