Mint and Fava Bean Spread

You can use fresh fava beans, but you will have two pods to remove, so I find frozen to work well and allows you to make it any time.

Ingredients

  • 12 ounce frozen fava beans
  • 8 ounce soft goat’s cheese
  • 1 garlic clove crushed
  • 2 spring onions or scallinos finely chopped
  • 1 tablespoon oliveo il
  • 1/2 lemon zest and juice
  • 60 medium fresh mint leaves
  • salt and pepper to taste

Instructions

  • Boil fava beans per package directions and cool in cold water. When cool enough to handle, slip off the outer skin and put the beans in the food processor.
  • Add the goat cheese, garlic, onion, oil, lemon zest and juice, mint and salt and pepper.
  • Process until until well mixed scraping down with spatula and adjusting to taste.
  • Turn into a bowl, cover and chill for at least 1 hour before serving.
  • Is wonderful on toasted bread or crackers.
