Any Kind of Muffins

Don't throw out that banana or that apple that is half bruised, cut it up and make these amazing muffins.

  • 2 tablespoon ground flaxseed, mixed with 1/3 c. hot water, allow to cool for 10 min
  • 1/3 cup oil
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1 cup yogurt/milk or other liquid (kefir way is perfect)
  • 3 mashed or shredded fruits or vegetables
  • 3 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder


Mash (or shred) fruits/veggies in a mixing bowl. Add all the liquid ingredients and sugar, and mix well.
Add dry ingredients, and stir till combined, but don’t over-mix.

Pour batter into a muffin tin, lined with paper muffin cups.

Bake at 350 F for 25-30 min.
Test with a toothpick to be sure they’re done!
