Apple Muffins

This recipe is muffin perfection, and it's very healthy. All types of flour work in this recipe, including whole wheat flour. Kids and adults alike, will love these muffins.

  • ½ cup vegetable oil
  • ½ cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ½ cup orange juice or water
  • ½ cup soy milk
  • ¾ cup old-fashioned oats
  • 1¼ cup all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • Pinch of salt
  • 3 apples, peeled, cored, and shredded


1. Preheat oven to 350°F.

2. In a large bowl, mix together oil, sugar, egg, vanilla, juice, soy milk, and oats.

3. Sift together flour, baking powder, baking soda, cinnamon, and salt. Add dry ingredients to wet ingredients; mix until just combined. Stir in shredded apples.

4. Pour batter into muffin tray using a ⅓ measuring cup. Bake at 350°F for 20 minutes. Cool on a wire rack.
