Asiago-Goat Cheese Tartlet with Golden Raisins and Cranberries

Ingredients
- 1/4 c. California golden raisins
- 1/4 c. dried cranberries
- 1 tsp. finely chopped orange zest
- 1 c. fresh orange juice
- 4 large eggs
- 2 c. heavy cream
- 4 oz. Boursin cheese
- 1 tbsp. finely chopped fresh basil
- Salt and pepper
- 6 premade 3-inch tart shells
- 2 tbsp. shredded Asiago cheese
- Balsamic Vinaigrette
- 3 oz. (6 tablespoons) olive oil
- 1 oz. (2 tablespoons) balsamic vinegar
- 1 tsp. finely chopped fresh thyme
- Salt and pepper
- 1 oz. frisée lettuce or other salad greens

Preparation
1 Measure raisins, cranberries, orange zest and juice into sautépan.
2 Heat and simmer until almost dry. Remove from heat and cool. Combine eggs, cream, Boursin cheese, basil, salt, pepper and raisin mixture; mix thoroughly.
3 cooking oil and bake at 350°F for 15 minutes or until golden brown on top.
4 Meanwhile for vinaigrette, mix oil and vinegar with thyme, salt and pepper.
5 Then, plate warm tartlet with frisée salad greens. Drizzle greens with balsamic vinaigrette. Serve at once.
