Asparagus with Peppers and Pine Nuts

  • 1 pound asparagus, trimmed and cleaned
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 red bell pepper
  • 2 tablespoon pine nuts


Toss asparagus with olive oil and salt and pepper and place on a cookie sheet.  Turn oven to broil and put the asparagus in watching closely for about 3 minutes.  Meanwhile, chop the pepper into a small dice.  After the asparagus begins to cook, top with peppers and pine nuts.  Continue to broil about 5 minutes until everything is browned.
