Don't have whole wheat flour? Use all-purpose flour instead.
Prefer a cake? Pour the batter into a loaf pan and bake in a 375℉ oven for about 45 minutes.
Wondering what to do with overripe bananas? Peel, store in plastic bags and freeze. When baking, slightly thaw by removing bananas from the freezer for a few minutes, then slice and add to the batter.

- 1½ cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 3 bananas, mashed
- ½ cup granulated sugar
- 1 egg, lightly beaten
- ⅓ cup neutral flavored oil
- 1 tsp. vanilla
- ¾ cup chocolate chips
1 Preheat oven to 375℉ (190℃). Lightly grease 10 muffin cups, or line with cupcake liners.
2 In a large bowl, mix together 1½ cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg, oil and vanilla. Stir the banana mixture into the flour mixture just until moistened. Add in chocolate chips and mix. Spoon batter into prepared muffin cups.
3 Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
