Basil Leaf Wrapped Meatballs
I was looking for a more interesting recipe for meatballs and a way to use some of the ingredients I got in my last CSA. This recipe used my basil leaves and some of the fresh, juicy tomatoes I had and was a great twist on a old favorite.

Ingredients
- 1 pound ground meat A combination of beef and turkey is healthy and tasty
- 1 large egg
- 1/2 cup whole wheat bread crumbs I make them with leftover challah
- 1 tablespoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 bunch fresh basil leaves
- 1/2 jar tomato sauce
- 3 large tomatoes
Preparation
Mix ground meat, egg, bread crumbs and spices. Make meatballs and put a basil leaf in the middle of each ball.
Place all meatballs in a medium saucepan and pour half a jar of pasta/tomato sauce and 3 large tomatoes on top of the meatballs.
Cook over medium heat for about 15-20 minutes until the meatballs are cooked through completely.
Serve over whole wheat pasta for a healthy and easy dinner.
