Pulled chicken sandwiches are a perfect anytime dinner. Add some sliced avocado to take it to another level. Tricks for avocado:
Pit, peel, and slice avocados just before serving so they don't brown. Squeezing fresh lemon juice over avocado.

  • 3 to 4 cups rotisserie chicken, about a 3-pound chicken, skin removed
  • 2 cups barbecue sauce
  • 4 kaiser rolls,split in half
  • 1 avocado, pitted, peeled, and sliced


Using your fingers or two forks, pull chicken from the bones, shredding it into medium strands.

Combine chicken and barbeque sauce in a medium saucepan. Cook over medium heat, stirring occasionally, for about 10 minutes, or until chicken is heated through.

Arrange 4 roll halves on a serving platter. Evenly distribute chicken among the rolls. Top with avocado slices, then the roll tops, and serve with Collard Greens.
