Blood Orange & Beet Salad

Ingredients
- 5 blood oranges, cut in rounds
- 5 baby yellow beets, cooked, cut in quarters
- 5 baby red beets, cooked, cut in quarters
- 1/2 fennel, sliced
- 1 red onion, sliced
- 2 watermelon radishes
- Olive oil, as needed
- Salt and pepper, as needed
- 1 teaspoon champagne or rice wine vinegar
- Fresh dill for garnish
Preparation
1 Combine all salad ingredients and toss with olive oil, salt, pepper and a teaspoon of champagne vinegar.
2 Finish with a dill garnish
