This is SO rich tasting and yet is made with skim buttermilk! It’s a wonderful treat after a dairy meal or grilled fish dinner.

Ingredients

  • unbaked pie crust
  • 4 large eggs
  • 1-1/2 cups sugar
  • 2 tablespoons flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 tablespoons melted butter
  • 1 cup buttermilk skim or lowfat
  • 1/3 cup sliced almonds or 1/2 cup currants optional

Instructions

Preparation

  • 1  Preheat the oven to 350 degrees. Place the pie crust on a cookie sheet.2 Combine the eggs, sugar, flour, vanilla extract, salt and melted butter in a large bowl and beat the ingredients with a whisk or electric mixer set at medium speed 2-3 minutes or until the mixture is smooth and uniform. Add the 3 buttermilk and stir the ingredients thoroughly to blend them thoroughly. Pour into the pie crust. Sprinkle the nuts or currants on top. Bake 45 minutes or until the surface is golden brown and the center is set. Remove from the oven and let cool. 4 Serve at room temperature. Makes one 9-inch pie.
