This is one of the first real ‘hits’ in my baking repertoire; a recipe inspired by one I found in the first cookbook I got when I was married, and has been passed along to all of my family members and lots of friends. And now I pass it on to YOU.

Butterscotch Brownies

Ingredients
- 1/2 cup oil
- 2 cup packed brown sugar NOT demerrara. Best is Domino’s dark brown or similar
- 2 teaspoon vanilla
- 2 eggs
- 1 1/2 cup all-purpose flour
- 2 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 cup chocolate chips optional
Instructions
- Heat oven to 350°F/175°C. Mix brown sugar and oil. Add vanilla and eggs. Stir in remaining ingredients. Spread in 9×13 pan. Bake 30 minutes. Cut into about 2-inch squares while warm. (Note: I don’t always cut while warm. If baked just right it doesn’t matter but a bit too long in oven and they will harden a bit when cool making it harder to cut).

I believe these are another name for blondes, which is brownies without chocolate!! I like to add chocolate chips when I make them.
