This filling, tasty and colorful salad can be an appetizer, a side dish or a meal in itself when served with rice.

“California Roll” Salad
Servings
Ingredients
- 1 cup sliced Persian cucumbers
- 2 carrots peeled and julienned
- 4 radishes julienned
- 2 cups cubed imitation crab
- 2 medium avocados pitted, peeled and diced
- 4 tablespoons rice wine vinegar
- Juice of 2 limes
- 4 cups cooked sushi rice
- 2 tablespoons black sesame seeds
- 1/2 cup soy sauce
Instructions
- In a large bowl, combine cucumbers, carrots, radishes, imitation crab and avocado and toss gently to combine.
- Add vinegar and lime juice and toss to coat.
- To plate, place ½ cup rice on each serving plate and 1 cup salad next to rice. Garnish with sesame seeds and serve with soy sauce on the side.











Israeli cucumbers right now are very similar Persian cucumbers with a slight amount of seeds. The taste is also real close.
Persian/Israeli/English cucumbers are all thin skinned, can be served unpeeled and most importantly are seedless. enJOY!

I make it for Shabbos and like to make extra this way i have leftovers for a light lunch or dinner

For those of year, scared to attempt making your own sushi rolls, or lack the time, this super easy & fast salad is the next best thing. Thank you Marcia Beth, for the chopped seaweed suggestion. Made this minus the radishes, carrots, & lime juice and served it mixed up. The kids devoured it to the last grain of rice. Thank you so much!!
Love this salad, especially because I like California roll but was never too good at wrapping nori. This is much easier. I dont like imitation crab, but have made a version of this with halibut.

i read about some substitue items in the california roll sushi salad… i.e. instead of immitation crab.. jamie said to use lox….etc…. now i cannot find that part of the article??? can anyone help?????
Oddly enough, this made with fresh cooked salmon is pretty much the content of the Samurai Rice Bowl at World Wrapps, a chain in California.
I’ve made pretty much this for myself ever since I left California. It’s so addictive.
I love the idea of using smoked salmon. I don’t know why I never thought of that. Actually now I’m thinking of combining fresh and smoked to see what that’s like.
As the weather heats up I love this type of meal. This Shabbos will be only me and my husband, this looks like the meal of choice. Love the chopped up seaweed idea too!
I love this salad! It has become our favorite quick light dinner.
I’ve made this a few times already – it was delicious. The second time I made it I grated the carrot and cucumber and I think it made it more “sushi-ish”, also, couldn’t find black sesame seeds where I live, so I used toasted – also yum!
my salad is almost the same i just mix it all together and i use cut up seaweed too
