I love the subtle Blue cheese flavor that the cheese imparts on this oniony quiche. It was also the first time I ever used fresh baby spinach and it really tasted and looked beautiful. I used a lower fat pie crust that I made with coconut oil, but you can make it easier with store bought.

- 1 8-inch pie crust, homemade or store bought
- 1 teaspoon olive oil
- 1 large onion, thinly sliced
- 4 large eggs
- 1 cup low fat milk
- 1 cup shredded Sincerely Brigitte Blue Marble cheese, mixed with 1 tablespoon flour
- dash salt and pepper
- 1 cup fresh baby spinach
Preheat oven to 350 and bake pie crust for 20 minutes.
Meanwhile, heat a medium skillet over medium low heat and add oil and onion. Cook for about 30 minutes until nice and caramelized. Set aside.
Beat 4 eggs with milk, once blended, add cheese, onions and spinach, mix well and pour into par baked crust.
Place quiche in the oven and bake for about 40 minutes until egg is completely set.
