- Turkey Tenderloins :
- 1-1/2 Pounds turkey tenderloins
- 1 (1.25-ounce) Package taco seasoning
- 1 Teaspoon ground cuminCucumber-Mango Salsa :
- 2 ripe mangos, peeled and diced
- 1 cucumber, peeled, seeded and diced
- 1/4 Cup minced red onion
- 1/4 Cup freshly squeezed lime juice

- Turkey Tenderloins :
- Preheat oven to 500 degrees F.
- Set turkey tenderloin on a foil-lined sheet pan. In a small bowl, stir together taco seasoning and cumin. Rub all sides of turkey with spice mix.
- Roast turkey 20 to 30 minutes, turning once, until the internal temperature reaches 165 degrees F. Remove from oven and set aside.
- Cucumber-Mango Salsa :
- Stir together mango, cucumber, red onion, lime juice and oil. Season to taste with salt and pepper.
