These chocolatey muffins will turn anyone into a zucchini lover, only if you tell them the secret ingredient.

- 2 eggs
- 1 cup sugar
- ½ cup vegetable oil
- 3 tablespoons unsweetend cocoa powder
- 1 teaspoon vanilla extract
- 1 cup grated zucchini
- 1½ cups whole wheat flour
- ½ teaspoon Baking soda
- ¼ teaspoon baking powder
- ½ teaspoon salt
- Dash cinnamon, nutmeg, cloves and cardamom
- ½ cup walnuts, coarsely chopped
1 Preheat oven to 350°F. Lightly grease 12 cup muffin tins.
2 In a large bowl beat the eggs with sugar and oil. Add the cocoa, vanilla, zucchini and stir well. Stir in the flour, baking soda, baking powder, salt and spices. Mix until moist.
3 Pour batter into prepared muffin tins. Sprinkle the walnuts over each muffin (my son loves to do this part as he makes sure every muffin get its share). Bake at 350°F for about 20 minutes or until cooked through.
