Servings

6 Servings

Ingredients

  • 2 can sweet corn I also have used blanched fresh corn cut off the cob. About 2 cups
  • 1 cup soy milk
  • 2 eggs lightly beaten
  • 3 tablespoon mayo
  • 2 tablespoon margarine
  • 2 tablespoon sugar If using fresh corn I found that the recipe doesn’t need the extra sugar
  • 1 tablespoon flour
  • pinch salt

Instructions

  • Preheat oven to 350.
  • Combine all ingredients, other than corn. Stir in corn. Pour into a well greased 1 quart swallow baking dish.
  • Bake 1 hour or until golden brown.

i made this recipe this past shabbos using dairy ingredient, fresh corn, and no sugar. i didn’t blanch the corn before cooking. when i make it again, which i will, i’ll blanch the corn, add the sugar, but not cook it quite as long.

i think the mayonaise gives it a good texture. it wasn’t as runny as corn puddings that my family makes.

very tasty!!! thanks for the recipe.
