CREAMY ASPARAGUS SOUP

Asparagus is chock full of vitamins and antioxidants and what better way to get a healthy dose of nourishment than in a delicious soup? The vibrant color of this soup looks elegant when served, and the flavor from the basil complements the asparagus perfectly. Your guests will love this one, that is, of course, if you’re willing to share!

‘Creamy’ Asparagus Soup

Ingredients

  • 3 tablespoons olive oil
  • 1 large onion diced
  • 4 cups vegetable or chicken stock
  • 2 pounds asparagus cut into 1 inch pieces
  • 1 cup fresh chopped basil
  • salt and pepper to taste

Instructions

  • In a large pot, heat the olive oil on medium-high heat and sauté onion until translucent. Add the stock, asparagus, and basil. Bring to a boil, cover and simmer for another 20 minutes. Using an immersion blender, puree soup until smooth and creamy. Season with salt and pepper to taste.
  • *Create a pistou by blending basil, garlic and olive oil together. Drizzle on soup right before serving for an elegant finish.

    this soup is simply delicious. it has this rich asparagus taste and is so filling…. a must to try!
