Crock Pot Veal Roast

I don’t really cook with veal often, even though it is a low-fat meat and I should probably be cooking with it much more. So when I saw the beautiful rolled veal neck roast at the Kosher grocery store, I had to pick it up! I did some research on crock pot veal roast recipes and came up with my own recipe. It came out perfect! Most of the recipes called for browning the meat first, but I was being lazy and didn’t want to wash any extra dishes, and it turns out the browning wasn’t even necessary. Crock Pot Veal Roast

Ingredients

  • 3-4 pounds veal roast
  • 2 gloves crushed garlic
  • 1 Tbsp dried thyme
  • 1 Tbsp dried rosemary
  • 1-2 medium onions sliced
  • 3/4 cup chicken stock
  • salt and pepper to taste

Instructions

Preparation

  • 1 Place onions on bottom of crock pot. Mix together the garlic, thyme and rosemary. Rub on all sides of the roast and place over onions in crock pot. Pour chicken stock around the sides of the meat. Season with salt and pepper.2 Cover and cook on high for 4-5 hours. That”s it! Just note that when you take the veal out of the crock pot, you should let it sit for a few minutes before slicing so the juices can redistribute in the meat. 3 As seen in the picture, I served the veal with rustic mashed potatoes and roasted brussels sprouts, sprinkled with Montreal Chicken seasoning and Old Bay seasoning.

    what if you don’t have a crock pot – how long and what temperature in the oven?

      Braise the roast, covered, at 325F. for about 3 hours or until a fork can inserted without resistance.

    Made this for dinner tonight in the Crock Pot. It was exactly as described. Lovely moist and tender. Only change that I made was to use fresh herbs. Definitely on our do again list.

    if u dont feel like browning, u can braise it instead. just sear the whole roast in the crockpot, then remove it to a plate while preparing the veggies and the broth and then put the meat back in
